The curing cave

The creamy mellowness of Maytag Blue does not just happen. The process cannot be rushed. Eight days pass from the time the cheesemaker first pours the milk into the warming vat until the wheels are placed in our caves for ripening. Then the long final step begins. Now the wheels of Maytag Blue begin the long aging process. The individual attention continues, with individual inspection and turning of each wheel.
