Maytag Blue Cheese Popovers
Ingredients (Makes approximately 24 mini popovers)
- 2 large eggs
- 1 C. milk
- 2 Tbls. unsalted butter, melted
- 1 C. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 oz. Maytag Blue Cheese, crumbled
- 1 Tbls. chopped fresh thyme
In a large bowl, whisk together eggs, milk, melted butter, flour, salt and pepper. Whisk until lumps have disappeared. Whisk in cheese and thyme.
Chill batter in an airtight container for at least 2 hours or up to one day in the refrigerator.
Preheat over to 425 degrees. Generously butter mini muffin tins. Fill each cup to the top with the chilled batter.
Bake popovers until golden and puffed, 15 to 20 minutes. Serve warm.
