Maytag Blue Care and Storage
Blue cheese will vary in color from white to creamy yellow. These variations are attributed to the seasonal changes in the milk. The veining will vary from light or dark blue to green. When first cut, it may show little veining, but after exposure to the air the veining will be enhanced.
To retain the moisture and preserve the texture of Maytag Blue Cheese, keep it in the original foil and store in a plastic bag in the refrigerator where it will be fine for 6-8 weeks. The cheese may also be kept in the refrigerator in a covered container, such as our glass cheese preserver. Because our cheese is made from all-natural ingredients and contains no preservatives, it may develop a natural bloomy rind.
Maytag Blue can be kept in the freezer for up to a year. We suggest that you remove the plastic seal, leaving our signature foil intact. Place the wheel or wedge in a freezer Ziploc bag and expel the excess air. When you are ready to use our cheese, simply thaw overnight in the refrigerator.
