Maytag Blue Care and Storage
Your Maytag Dairy Farms cheese is a perishable item and should be refrigerated immediately.
Well-aged blue cheese will vary in color from white to creamy yellow. These variations are attributed to the season of the year when the cheese was made. When first cut, the cheese may show little veining, but after exposure to the air, the veining will be enhanced. Color variations rarely affect the quality of the cheese.
Your Maytag Blue Cheese can be kept in the original foil and stored in a plastic bag in the refrigerator, to retain the moisture and preserve the texture, for four to six weeks.
Because our cheese is made from all-natural ingredients and contains no preservatives, it may develop a natural bloomy rind.
Maytag Blue can be kept in the freezer for up to a year.
Although whole wheels of cheese can be frozen, we suggest cutting the wheels into smaller segments for serving. First remove the plastic seal, leaving our signature foil intact, then, place the wheel or wedge in a moisture-proof airtight plastic freezer bag and expel the excess air. Before use, remove from the freezer 24-48 hours and thaw in the refrigerator.
The secret to preserving the flavor and texture of the cheese is to be sure it is perfectly sealed before freezing and throughout thawing time.
