How to Store

To retain the moisture and preserve the texture of Maytag Blue Cheese, keep it in the original foil and store it in a plastic bag in the refrigerator where it will be fine for six to eight weeks. The cheese may also be kept in the refrigerator in a covered container, such as our glass cheese preserver. Because our cheese is made from all-natural ingredients and contains no preservatives, it may develop a natural bloomy rind. This naturally occurring mold is okay, but if you’d prefer, just cut it off upon serving.

Maytag Blue can be kept in the freezer for up to a year. Although whole wheels of cheese can be frozen, we suggest cutting the wheels into smaller segments for serving. First remove the plastic seal, leaving our signature foil intact, then, place the wheel or wedge in a moisture-proof airtight plastic freezer bag and expel the excess air. This helps retain the moisture and preserve the flavor, freshness, and the smooth texture of the cheese. When you are ready to use our cheese, remove from the freezer 24-48 hours before and thaw in the refrigerator. The secret to preserving the flavor and texture of the cheese is to be sure it is perfectly sealed before freezing and throughout thawing time. Your Maytag Dairy Farms cheese may get bluer when exposed to air and is best served closer to room temperature
