Our cheese should be fine in the refrigerator for 6-8 weeks. Our blue is a natural cheese. It will naturally bloom on the cut surfaces after an extended period of refrigeration but is not harmful. Some prefer a bloomy rind on their blue cheese but others prefer to remove by scraping or giving the cut surface a fresh trim.
Our blue cheese can be kept in the freezer for up to a year. We suggest that you remove the plastic seal, leaving our signature foil intact. Place the wheel or wedge in a freezer Ziploc bag and expel the excess air. When you are ready to use our cheese, simply thaw overnight in the refrigerator.
Our tours do not take you through our cheesemake room but we do offer a walking tour overlooking the farm. We will share the history of the farms, show you our packaging department where Maytag Blue is hand-wrapped and end with a free sampling in our farm cheese shop.

The freezer packs, which may be included in your order, are reusable and can be stored frozen or ambient and reused.
The product is non-toxic and water soluble and can be disposed of in normal trash collection.
The only cheese we recommend freezing is our Blue Cheese, which can be frozen up to a year.
Although the lids are not listed on the web, we do sell them individually.
