Maytag Blue Cheesecake
1 1/2 C. cracker crumbs
2/3 C. pistachio nuts, chopped fine
4 Tbls. butter, melted
3 – 8 oz. cream cheese, softened
2 – 8 oz. wedges Maytag Blue (reserve 4 oz.)
1/3 C. heavy cream
1 tsp. rosemary
1/4 tsp. ground pepper
Preheat oven to 350 degrees.
Mix well crackers, pistachios and butter. Press into the bottom and on the sides of a 9” springform pan.
In a large bowl, beat cream cheese, cream and 12 oz. of crumbled Maytag Blue until smooth. Add in rosemary and pepper.
One at a time, add eggs, beat until egg is combined. Fold in reserved 4 oz. of crumbled Maytag Blue.
Pour into prepared crust. Bake for 50 minutes on center rack.
Remove from oven. Place on a cooling rack. Refrigerate 4 hours to serve chilled. May be served warm.
Serves 16-24 depending on serving size.
