Mexican Street Corn with Maytag Blue
- 4 ears of fresh sweet corn, shucked
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1/4 cup chopped cilantro, plus more for garnish
- ¼ tsp chili powder (more to taste)
- ¼ tsp cayenne pepper
- 2 tsp lime juice
- 4 oz Maytag Blue Cheese, crumbled.
Mix together mayo, sour cream, cilantro, chili powder and cayenne. Grill corn directly on a medium hot grill, turning frequently until evenly charred, about 9-10 minutes. Remove corn from grill and carefully smear ears with sauce mixture. Roll coated ears on plate of crumbled Maytag Blue Cheese. Garnish with additional cilantro or additional Maytag Blue Cheese to taste.
