UPON ARRIVAL

Blue cheese will vary in color from white to creamy yellow. These variations are attributed to the seasonal changes in the milk. The veining will vary from light or dark blue to green. When first cut, it may show little veining, but after exposure to the air the veining will be enhanced.

STORING CHEESE

To retain the moisture and preserve the texture of Maytag Blue Cheese, keep it in the original foil and store in a plastic bag in the refrigerator. The cheese may also be kept in the refrigerator in a covered container, such as our glass cheese preserver.  Because our cheese is made from all-natural ingredients and contains no preservatives, it may develop a natural bloomy rind.

FREEZING

Maytag Blue Cheese can very successfully be stored in your freezer. It is best to leave as much of the original foil on the cheese as possible.

The piece of cheese to be frozen must be sealed in a moisture proof airtight plastic bag intended for storage of frozen foods. This helps retain the moisture and preserve the flavor, freshness, and the smooth texture of the cheese.

Maytag Blue can be frozen for up to one year. Remove from the freezer 24 to 48 hours before serving and thaw in the refrigerator. The secret to preserving the flavor and texture of the cheese is to be sure it is perfectly sealed before freezing and throughout the thawing time.

Cheese develops its full flavor as it comes to room temperature. Remove the cheese from refrigerator at least 25 minutes before serving. Enjoy as part of a cheese plate or try one of these simple recipes.

HONEY-PECAN FALL FRUITS

Drizzle honey over a wedge of Maytag Blue. Sprinkle with chopped toasted pecans. Serve with sliced apples and pears.

MAYTAG BLUE BRUSSELS SPROUTS

Trim and halve Brussels sprouts. Toss with olive oil, salt, and pepper. Roast in a 400°F oven for 25 minutes or until tender. Top with crumbled Maytag Blue and broil 2 minutes or until bubbly.

BACON-WRAPPED BLUE DATES

Cut a horizontal pocket in each date. Stuff with Maytag Blue. Wrap each date in a piece of bacon; secure with a toothpick. Bake in a 375°F oven for 20 minutes or until bacon is cooked.

CANAPÉS WITH RADISHES AND SEA SALT

Combine equal parts Maytag Blue and softened butter. Spread on toast points or crackers. Serve with crisp radishes sprinkled with sea salt.

MAYTAG JALAPEÑO POPPERS

Cut jalapeño peppers in half lengthwise; remove seeds and membranes. Stuff with Maytag Blue. Wrap each jalapeño half in a small piece of bacon; secure with a toothpick. Bake in a 375°F oven for 20 to 25 minutes or until bacon is crisp.
